Tractorless red wine vinegar is barrel aged for up to 10 years. We create our vinegar using the solera process commonly used when creating Port-style wines.
This creates a final product with a rich array of complex flavours ranging from deep savoury tobacco and oak characters from the original 2006 batch to vibrant ruby colours and lifted berry freshness from our most recent 2016 batch and of course the complex blend of all the flavours from all the batches between those years.
